Salmon with Soy Citrus
This flavorful recipe features salmon glazed with a combination of orange, soy sauce, and honey. Serve the salmon with a side of fresh sugar snap peas to make it a meal.
The combination of orange, soy sauce, and honey is delicious on many things, but when added to salmon and cooked under high heat, the outcome is a colorful, deep golden glaze! Adding a touch of heat at the end adds to the “mouth-explosion” of flavors. Try it, you’ll see!
Ingredients
Serves 4
- Zest and juice of 1 navel orange
- 3 tablespoons light soy sauce
- 2 tablespoons honey
- 1 tablespoon white balsamic vinegar or balsamic vinegar
- 4 (4- to 6-ounce) salmon fillets, rinsed and patted dry
- 1 (8-ounce) package fresh sugar snap peas, trimmed
- 1 jalapeno pepper, minced, optional
Cook’s Note: Coating the baking sheet with foil makes for super-speedy cleanup.
Instructions
- Preheat broiler.
- In a small bowl, whisk together the orange juice and zest, soy sauce, honey, and vinegar.
- Place the salmon skin side down on a foil-lined baking sheet coated with nonstick cooking spray. Brush 1 tablespoon of the orange juice mixture evenly over the fish. Broil 7 to 8 minutes or until just opaque in center.
- Meanwhile, heat a large nonstick skillet over medium-high heat. Coat sugar snap peas with cooking spray and cook for 3 minutes, or until just beginning to brown, stirring frequently. Set aside.
- Add the remaining orange juice mixture to the skillet; bring to a boil over medium-high heat and boil for 2 minutes, or until reduced to 1/4 cup.
- Drizzle the orange juice mixture over the salmon and top with minced jalapeño, if desired. Serve with the snap peas.
