Cranberry-Lime Granita
A granita is a refreshing icy fruit treat, so elegant in appearance, it feels like a treat to eat. Its unique granular texture is achieved by frequently stirring the mixture while it freezes, which keeps the ice crystals small. This recipe is especially good if you have mouth tenderness, as chilled foods can soothe discomfort.
To limit the amount of sugar, use unsweetened cranberry juice, not cranberry cocktail. If you do not have mouth sores or irritation, add a tablespoon of lime juice before freezing for more tartness.
Once the mixture is fully icy, you can transfer it to a container and keep in the freezer until you are ready to eat it.
Ingredients

- 3 cups unsweetened cranberry juice, divided use
- 1/2 cup granulated sugar
- Zest of 1 lime
Tip: If the mixture hardens too much, break it up in a food processor using the pulse feature.
Instructions
In a small saucepan over medium heat, combine 1 cup of the cranberry juice and the sugar. Bring to a simmer, swirling the juice until the sugar completely dissolves.
Transfer to a 13-by-9-inch baking pan and let cool. Add the remaining 2 cups of cranberry juice and the lime zest.
Freeze for 1 to 2 hours, or until the edges and bottom turn to ice. Using a fork, scrape the sides and bottom of the pan, and stir to redistribute.
Return to the freezer and repeat every 30 to 60 minutes or until the mixture is uniformly icy.
