Grilled Veggie and Goat Cheese Toasts

Grilled veggies are combined with fresh tomatoes and white beans and spooned over grilled slices of multigrain bread spread with goat cheese. The white beans take on the flavors of the other ingredients and add body, fiber, and protein.

Serves 4

  • 1 zucchini, cut in half lengthwise
  • 1 onion, cut into ½-inch-thick rounds
  • 6 ounces multigrain bakery bread, cut into 8 (½-inch-thick) slices
  • 1 (4-ounce) package fresh goat cheese
  • 1 cup chopped fresh tomatoes
  • ½ (16-ounce) can navy beans, rinsed and drained
  • Salt and freshly ground black pepper

  1. Preheat grill or grill pan to medium-high heat.
  2. Coat both sides of zucchini and onion with cooking spray and grill 8 minutes on each side or until just tender. Place on cutting board and chop coarsely.
  3. Meanwhile, coat both sides of bread slices with cooking spray and grill 1 to 2 minutes on each side or until grill marks appear. Gently spread equal amounts of goat cheese on each bread slice.
  4. Combine the zucchini, onion, tomatoes, and beans in a medium bowl. Season with salt and pepper. Spoon equal amounts over each bread slice.
